Josh Vears – Head Chef White Salt

Josh Vears moved to Perth from Cairns in 2006. He commenced a full time Apprenticeship in commercial cookery with Hospitality Group Training in 2007 and took up his first placement at the then Benion Street café in Trigg. In 2008 Josh joined the kitchen brigade at WHITE SALT where he was part of the award winning team, celebrating two Gold Plate Awards a Prix D’Houour award and a Premiers award.
Josh completed his apprenticeship and qualified while at White Salt, moving on in 2010, gaining experience in various establishments in Perth including Basq and a stint in mine site catering.
He took up the position of Junior Sous Chef at Bistro Felix and soon discovered his passion for French and European cuisine and cooking techniques. During this time, Bistro Felix also achieved many awards. Josh then took on a senior role at Basq and played a major role in the opening of this restaurant under the guidance of Head Chef Neil Herbert and further improved his knowledge and his passion for cooking and kitchen management.
He returned to White Salt in 2015 in the role of Sous Chef and we are proud to now have Josh as our Head Chef.
Together with his long term partner Bec, Josh has two wonderful young children and draws his inspiration from them. He strives to do the simple things in life well. He believes in the same philosophy and approach to food and cooking. Simple fresh produce, cooked well. It really is simplicity at its best.
